In today’s post, we’re diving into the captivating world of lacto fermentation, unraveling the art of preserving and transforming tomatoes in a way you might not have considered before. Have you ever wondered, “What is lacto fermentation?” or thought about whether tomatoes can be fermented?

If you’re searching for alternative methods to preserve these vibrant fruits, beyond the classic tomato sauce, you’re in the right place. Join me as we explore the fascinating process of fermenting tomatoes, revealing the flavors it unlocks, and discovering just how long it takes to turn these garden gems into tangy, probiotic-rich wonders.

Lacto fermentation, in a nutshell, is the art of using natural salt and the friendly bacteria Lactobacillus to transform fresh fruits and veggies into tangy, probiotic-rich wonders. It’s about preserving the beauty of seasonal produce, infusing them with flavor, and savoring the essence of each ingredient long after its season has passed.

The best part? You can lacto ferment almost anything, from crisp cucumbers to fiery peppers, unleashing your culinary creativity. But today, let’s dive into one of my favorites – Cherry Tomatoes.

Cherry Tomato Lacto-Fermentation takes these petite fruits to a whole new level. With just a few simple ingredients like fresh cherry tomatoes, garlic cloves, and a selection of herbs, you can create a vibrant burst of flavor that elevates your dishes. In this blog post, I’ll walk you through the process, from ingredient list to the final taste test, and offer some mouthwatering serving suggestions that will make these fermented treasures a delightful addition to your meals.

CHERRY TOMATO LACTO-FERMENTATION:

Ingredients:

  • Fresh Cherry Tomatoes
  • 2% Salt (of the weight of your produce)
  • Garlic Cloves
  • Herbs like Bay Leaves, Thyme, or Oregano

Start with a clean, sterile glass jar. Wash the cherry tomatoes and pack them snugly into the jar. Add a few garlic cloves for a hint of savory goodness. Drop in your choice of herbs – bay leaves for a Mediterranean twist, thyme for earthy charm, or oregano for a touch of the Mediterranean. Dissolve 2% salt in water to create a brine. Pour this brine over the tomatoes until they’re fully submerged.

Place a weight, like a small glass, a plastic bag filled with water or some salad leaves on top to keep the tomatoes submerged. Seal the jar, but not too tightly. Lacto fermentation produces gas, so you want a little room to breathe.

Let your jar sit at room temperature for about a week. Taste along the way until they reach your desired level of tanginess.

CHEF’S SECRETS:

Make sure to use a sterile glass and clean hands. You can sterilize your jars in the dishwasher or by popping them in the oven for a while.

So, give Cherry Tomato Lacto Fermentation a try, and savor the essence of each bite, taking you on a delicious journey that bridges the past and present. Happy fermenting and even happier feasting!
