Ingredients
Yogurt mousse
- 50 ml plant milk
- 50 g sugar
- 1 lemon, zested
- ½ lemon, juiced
- 1 tbs nutritional yeast
- 6 g agar-agar (vegan gelatine)
- 300 ml plant yogurt
- 200 ml whipped cream
Caramelized figs
- 10 figs, halved
- 20 g sugar, to coat
To serve
- 50 g walnuts, soaked overnight & roughly chopped
- mint leaves
- caramel sauce (from the figs)
- crackers
Method
To make the mousse, start by heating up milk, sugar, agar, lemon zest and juice until simmering. Take off the heat and add yogurt and nutritional yeast. Once cooled down at room temperature, blend until smooth. Whip the cream and gently incorporate into the yogurt mix. Cover with cling film and let it set in the fridge for a few hours or overnight.
Just before serving the dish, half the figs, lightly tap them into a bowl of sugar and caramelize using a blow torch; alternatively you can caramelize them in a pan on low-medium heat.
Spread a generous layer of mousse and cover with freshly caramelized figs, chopped walnuts and mint leaves. Serve with crackers or your favorite toasted bread and enjoy this elegant yet simple brunch dish.
