A lighter, fresher take on Spargelzeit traditions
Instead of making a traditional hollandaise sauce, this recipe uses the flavorful cooking broth left in the pan to create a quick, light drizzle.
It brings all the classic spring flavors together — juicy asparagus, comforting potatoes, and the richness of hollandaise spices — but in a fresher, plant-based way that’s easy enough for everyday dinners.

This recipe has 2 servings.
Ingredients
8 green asparagus spears
1 garlic clove, finely diced
3 tbsp water
1 tbsp oil
Salt and pepper, to taste
1 tsp lemon juice
A sprinkle of kala namak (for eggy aroma)
½ tsp Dijon mustard
A pinch of cayenne pepper
(Optional) 50 g vegan butter
Method
Heat a pan over medium heat.
Add oil, water, and diced garlic. Let it cook gently for 2 minutes.
Add the asparagus spears, turn the heat down to low, season with salt and pepper, and cover with a lid.
Cook for 3–5 minutes (depending on the thickness) until tender and bright green.
Remove the asparagus and plate.
To the remaining garlicky oil in the pan, add lemon juice, kala namak, Dijon mustard, cayenne pepper, and optional vegan butter. Stir to combine.
Drizzle this hollandaise-inspired sauce over the plated asparagus.
I plated the asparagus with simple oven-baked potatoes, radish slices for freshness, and a generous drizzle of the hollandaise-like oil from the pan

Tips & Swaps
No asparagus? Try tenderstem broccoli or green beans — just adjust the cooking time slightly.
No kala namak? Regular sea salt works too — you’ll miss the eggy aroma, but the lemon and mustard will still bring plenty of flavor.
Want to make it heartier? Add sautéed mushrooms, crispy chickpeas, or grilled tofu on the side for a more filling meal.
